Studies have shown that steam is both an effective, gentle, and environmentally friendly cleaning method. Biofilm is a particular challenge because bacteria protect themselves by encapsulating within a slimy layer, making them far more resistant than free-floating bacteria.
In fact, biofilms can be up to 500 times more resistant to disinfectants and chemical agents than planktonic (free-floating) bacteria.
This means that conventional chemical cleaning is often not sufficient to remove biofilm or inactivate bacteria effectively enough to prevent them from regrowing.
The high temperature of steam and its ability to penetrate cracks, dead angles, and porous surfaces means that it can disrupt the structure of biofilm while simultaneously removing bacteria-without chemicals and without leaving residues.
Several scientific studies show that steam at 125-150 °C can reduce biofilms formed by, for example, Listeria monocytogenes, Salmonella Typhimurium, and Staphylococcus aureus to below the detection limit within seconds, depending on the surface material and exposure time. (Ban et al., 2021)
