Professional cleaning and disinfection of wine barrels

Optima Steamer is the ideal solution for cleaning and disinfecting wine barrels, generating steam temperatures of up to 177°C. At the nozzle tip, the steam reaches 100-116°C, and when applied under light pressure, even higher surface temperatures can be achieved within seconds.

Optima Steamer can efficiently clean two barrels simultaneously as a standalone cleaning station. In larger wineries, it can also be seamlessly integrated into an automatic barrel washing line, enabling the cleaning of up to four barrels at a time.

The dry steam penetrates deep into the wood surface and its pores, effectively eliminating hidden bacteria through the combined action of heat and moisture. Because saturated steam reaches areas that are difficult to access with hot water or chemical cleaners, it provides a highly effective method for thorough cleaning and disinfection while helping preserve the quality and integrity of the barrel.

Eliminates bacteria, mold and yeast

It has been well documented that steam rapidly and effectively inactivates most microorganisms. When steam is applied at temperatures above 100°C for 5-10 minutes, it eliminates active bacteria, yeasts, and fungi.

Although certain yeast strains are resistant to low pH, high alcohol levels, and/or SO₂, dry steam effectively controls these spoilage microorganisms. This makes steam a highly effective solution for cleaning and disinfecting wine barrels while helping to preserve wine quality.

Eco-friendly cleaning

Optima Steamer uses only a minimal amount of water to clean and disinfect wine barrels while generating high-temperature dry steam that effectively eliminates microorganisms.

The combination of low water consumption, minimal wastewater, and a reduced need for chemical cleaners makes it an environmentally friendly solution for wineries seeking efficient and sustainable barrel cleaning.

Brettanomyces spp. ("Brett") can survive in oak barrels for many years and is notoriously difficult to eliminate because it penetrates deep into the wood. Traditional cleaning methods, such as hot water pressure washers, often fail to achieve the temperatures required for effective sanitation, while chemical disinfectants may leave residues that can affect wine quality.

Optima Steamer has proven to be a more effective solution. When equipped with its dedicated wine barrel cleaning accessories, it delivers steam at 110°C (230°F) and 5 psi, enabling the critical temperature of 80°C (176°F) to be reached 5 mm (0.2 in.) beneath the wood surface in just 23 minutes.

While the use of water and chemicals delivered through a pressure washer with rotating nozzles may be sufficient for external cleaning, cleaning the internal surfaces of tanks (stainless steel, concrete, and HDPE plastic) requires a more scientific approach.

Most microorganisms are eliminated when exposed to a specific temperature for a defined period of time. The fastest and most environmentally friendly way to clean every area of the surface is by using dry steam (also known as saturated steam or moist heat)

Unlike hot water or wet steam, dry steam - the gaseous form of water that carries thermal energy - can move around obstacles and reach areas that liquid hot water cannot access.

In a case study, the Optima Steamer SE 42kW was able to deliver 93°C throughout an approximately 30,000-litre stainless steel tank within 40 minutes.* This was achieved without the use of chemicals and with only a few litres of water.

*The heating time will naturally vary depending on ambient temperature, tank material and thickness, as well as the size and length of the steam hose.

Steam is ideal for CIP (Cleaning in Place) applications. Equipment used in bottling lines can be delicate and may not withstand high pressure or aggressive acidic chemicals. Dry steam can deliver temperatures above 93°C through nozzles and piping in bottling systems while helping to reduce cleaning time and water consumption.
